Mini Savory Waffles with Proscuitto and Cauliflower
Ingredients:12oz frozen cauliflower rice2 tablespoons coconut flour1/2 teaspoon Himalayan salt1/2 teaspoon black pepper1/2 teaspoon dried thyme2 large eggs2 slices proscuitto avocado oil
Microwave the cauliflower rice in a glass bowl for 3 minutes on high. Transfer to a nut milk bag, or kitchen towel and ring out all the liquid. Empty the nut milk bag into the glass bowl and add in the coconut flour, seasoning and eggs. Mix until well combined.
Add in a tablespoon to 1/4 cup of lightly cauliflower mix on a lightly oiled waffle iron. Close and cook 3-4 mintues, or per waffle iron instructios. Repeat with the reamining batter.
Serve with fun toppings like green goddess, beet mayo, ranch, avocado, hard boiled eggs or pickled veggies!
