Naturally Sweetened Homemade Granola

Ingredients
3 cups gluten free oats
1 very ripe banana
1 tbsp sunflower seed butter
3 tbsp melted coconut oil
pinch of salt
1/2 tsp vanilla bean powder or vanilla extract
1/2 tsp cinnamon
1/4 cup dried cacao nibs
1/4 cup dried coconut
1/4 cup dried cranberries
1/4 cup dried mulberries

 

Directions:

In a large bowl mash banana and mix in sunflower seed butter, coconut oil, cinnamon, salt, and vanilla. Once everything is incorporated, mix in the oats and dried fruit.

 

Preheat oven to 350F. Line a cookie sheet with parchment paper, spread an even layer of granola and bake for 20-25 minutes.

 

Let the granola completely cool and store in an airtight container

 

Pancake Egg Muffins

For the pancakes:

1 cup flour  
1/2 cup oat flour
1 teaspoon baking powder
1 teaspoon baking sofa
1/2 teaspoon salt
2 large egg
1 cup buttermilk (or plain kefir) 
5 tablespoons melted butter (or avocado oil)
2 tablespoons maple syrup

Directions:

Preheat the oven to 350. Mix all of the ingredients in a large mixing bowl until the batter is smooth. Grease a muffin tin and pour a bit of batter into the bottom of each. Crack one egg into each and cover the top with more batter. Bake for 16-18 minutes, depending on how runny you want the eggs. 

 

Use the remaining batter for pancakes (and freeze them for later if you'd like). as an alternative, you can bake these with fruit instead of eggs. Banana slices and fresh peach are in our current rotation.
