Naturally Sweetened Homemade Granola
Ingredients3 cups gluten free oats1 very ripe banana1 tbsp sunflower seed butter3 tbsp melted coconut oilpinch of salt1/2 tsp vanilla bean powder or vanilla extract1/2 tsp cinnamon1/4 cup dried cacao nibs1/4 cup dried coconut1/4 cup dried cranberries1/4 cup dried mulberries
In a large bowl mash banana and mix in sunflower seed butter, coconut oil, cinnamon, salt, and vanilla. Once everything is incorporated, mix in the oats and dried fruit.
Preheat oven to 350F. Line a cookie sheet with parchment paper, spread an even layer of granola and bake for 20-25 minutes.
Let the granola completely cool and store in an airtight container
Pancake Egg Muffins For the pancakes:
1 cup flour 1/2 cup oat flour1 teaspoon baking powder1 teaspoon baking sofa1/2 teaspoon salt2 large egg1 cup buttermilk (or plain kefir) 5 tablespoons melted butter (or avocado oil)2 tablespoons maple syrup
Preheat the oven to 350. Mix all of the ingredients in a large mixing bowl until the batter is smooth. Grease a muffin tin and pour a bit of batter into the bottom of each. Crack one egg into each and cover the top with more batter. Bake for 16-18 minutes, depending on how runny you want the eggs.
Use the remaining batter for pancakes (and freeze them for later if you'd like). as an alternative, you can bake these with fruit instead of eggs. Banana slices and fresh peach are in our current rotation.
