Amanda blends up a herby sauce with coconut milk to compliment her shrimp and rice bowl.
This coconut bowl is a perfect weeknight dinner since it's easy, requires few ingredients and comes together quickly. We love making extra green sauce to have around the house! For more great recipes by @amandafrederickson visit her blog here!
Green Coconut Bowl
1 clove garlic
1 4inch piece of lemongrass
1 cup cilantro
1 cup basil
2 tbsp fish sauce
1/4 cup coconut milk
5 tbsp coconut oil
juice of 1 lime
1 lb shrimp
Add garlic, lemongrass, herbs, fish sauce, coconut milk, 3 tbsp coconut oil and a squeeze of lime to a blender. Blend until smooth; set aside.
In a medium saute pan, heat the remaining coconut oil over high heat and cook shrimp for 2-3 minutes or until pink and firm.
Assemble the bowl by adding shrimp, rice, vegetable and a drizzle of the coconut sauce. Add more salt / fish sauce to taste if needed. Enjoy!
