Nordic Lingonberry Porridgeserves 2
2/3 cup millet or quinoa (or half and half)1 1/4 cup water1 cup lingonberries + some more for serving2 tbsp coconut milk1/3 - 1/2 cup almond milk (or other plant-based milk)1 tbsp lemon juice1/2 tsp vanilla powder1 tbsp maple syrup
Directions:1. Rinse the millet or quinoa well with hot and cold water. Place in a small saucepan with thewater, bring to a boil and simmer for about 15 minutes until the water is absorbed. Let cool.2. Once the grains have cooled, transfer them to a blender. Add the lingonberries, coconut milk,almond milk, lemon juice, vanilla, and honey and blend until smooth. Add liquid as needed. Taste,and add sweetener if desired. Divide into bowls, serve with lingonberries, and enjoy!
