Take your bruschetta up a notch with homemade cheese! Making cheese at home is a labor of love – it's a bit time intensive and you need to have a watchful eye, but the flavor is unmatched.

Not sure how to use your leftover whey? Add it to your next batch of sourdough, use it to cook pasta, or lacto-ferment veggies to pickle them!

ingredients

For the Fresh (Almost) Mozzarella

  • 1 gallon milk
  • 1 cup white vinegar
  • Sea salt

For the Bruschetta

  • 1/4 cup olive oil
  • 1 cup cherry tomatoes, cut in half
  • 1 clove garlic
  • 1/4 cup fresh basil & rosemary
  • 1 tablespoon balsamic vinegar
  • Salt & pepper
  • Sourdough bread

Method

For the Cheese

  • Step 1

    In a large pan, add the milk and heat over medium-heat until 120F. Remove the milk from the heat and pour the vinegar while stirring. Stir for 20 sec to make sure it mixes well. Add a lid and let it sit for 15 min.

  • Step 2

    Then using a big spoon or spatula, remove the curd from the pot and place it into a strainer to separate the curd from the whey, and place it in a bowl.

  • Step 3

    Using your hands, squeeze out the curd. Transfer the whey to a jar (We’re going to use it in another recipe).

  • Step 4

    Place the curd into the bowl. (I don’t use salt but if you want you can add the salt at this time.) Microwave the cheese for about 30 sec. until 155-165F, then using your hands, stretch it and fold until the cheese is smooth. (Or you can do the heating part using 155-165F hot water and let the curd sit in it for around 20 sec)

  • Step 5

    Repeat the process one or two times until the cheese is well smooth. The cheese would be a little hot, so you can use food-safe gloves during this process.

  • Step 6

    Shape the cheese into a ball as in the IG Reel and place it in the room-temperature whey. Refrigerate it for around 1 hour or until you are ready to use them.

For the Bruschetta

  • Step 1

    In a small bowl, add the ingredients and stir well.

  • Step 2

    Cut the sourdough bread into slices and add fresh mozzarella slices on top.

  • Step 3

    Using a kitchen torch, toast the mozzarella. Add the tomatoes and fresh leaves.

  • Step 4

    Serve immediately!
