ingredients
Crust
- 120 grams ladyfingers
- 50 grams butter

Cheesecake
- 50 grams dark chocolate 70%
- 225 grams double cream
- 3 teaspoons instant coffee powder
- 375 grams cream cheese
- 135 grams ricotta
- 3 eggs
- 150 grams plain white flour
- 7 grams cocoa powder
- Pinch of salt

Tiramisu Topping
- 180 grams mascarpone
- 180 grams whipping cream
- 1 egg yolk
- 45 grams icing sugar
- 1 teaspoon agar agar, optional but helps with setting
- Cocoa powder for dusting
Method
Step 1
Make the base by blitzing the lady fingers and slowly adding the melted butter until a paste forms. Pack tightly on a 20cm springform pan lined with a double layer of baking paper.
Step 2
Put the chopped chocolate, coffee powder and cream in a bowl and melt over hot water for a couple of minutes. Remove from heat and continue stirring until you have a shiny sauce.
Step 3
Blend with a hand blender the cheeses, eggs and sugar. Slowly add the chocolate mix and finally fold the flour, salt and cocoa powder.
Step 4
Pour mixture evenly onto the baking tin.
Step 5
Bake 35 min in an oven preheated at 350F. Let it cool completely in the fridge.
Step 6
Whip heavy cream with icing sugar.
Step 7
Whip mascarpone with the egg yolk and agar agar. Fold whipped cream into mascarpone.
Step 8
Apply the mix over the cooled cheesecake. Put it in a refrigerator for 1 hour.
Step 9
Sprinkle it with cocoa before serving
