ingredients
For the pizza dough
- 1 ¾-2 cups bread flour
- 1 teaspoon granulated sugar
- 1/2 envelope instant dry yeast
- 1 teaspoon kosher salt
- 3/4 cup (110°F) water
- 1 tablespoon olive oil, plus extra for oiling

For the teriyaki chicken marinade
- 1/4 cup Kikkoman® Teriyaki Marinade & Sauce
- 2 tablespoons brown sugar
- 4 garlic cloves, minced
- 2 tablespoons mirin
- 1 tablespoon rice vinegar
- 1/4 teaspoon freshly ground black pepper
- 1 teaspoon fresh grated ginger
- 1 pound boneless skinless chicken thighs, trimmed and cubed

For the teriyaki glaze
- 1/2 cup Kikkoman® Teriyaki Marinade & Sauce
- 1 cup water
- 2 tablespoons mirin
- 1/2 cup brown sugar
- 2 tablespoons rice vinegar
- 2 teaspoons sesame seeds

- 1/2 pineapple, grilled and cut into ½-inch slices
- Scallions, sliced `

Method
Prepare the Dough
Step 1
In a bowl, mix together 1 ¾ cups of bread flour, sugar, instant dry yeast, and kosher salt.
Step 2
While mixing, gradually add in water and 1 tbsp of olive oil. Knead for 5-10 minutes until combined. Add more flour as needed.
Step 3
Oil a large bowl and add the kneaded dough. Cover and let rise until it doubles in size, about 1 hour.
Marinate the Chicken
Step 1
In a bowl, mix together Kikkoman® Teriyaki Marinade & Sauce, brown sugar, garlic, mirin, rice vinegar, black pepper, and grated ginger.
Step 2
Submerge chicken thighs in the marinade. Cover and marinate for 30 minutes to 1 hour.
Prepare the Teriyaki Glaze
Step 1
In a pan, mix together Kikkoman® Teriyaki Marinade & Sauce, water, mirin, brown sugar, and rice vinegar.
Step 2
Bring to a boil and reduce to a simmer until the sauce has reduced and thickened slightly.
Step 3
Once thickened, stir in sesame seeds and remove from heat. The glaze will thicken more as it cools.
Grill the Dough
Step 1
Preheat a grill to 400°F.
Step 2
Once the dough has doubled in size, punch it down to deflate. Lightly flour a pizza peel or a parchment paper-lined baking sheet and gently stretch out the dough into a 12-inch circle.
Step 3
Drizzle the side facing up with olive oil and place the oiled side on the grill. Cover and cook for 5-7 minutes or until golden and brown. Remove from the grill and set aside.
Grill the Chicken
Step 1
Add the marinated chicken thighs to the hot grill. Grill for 5-6 minutes on one side until slightly caramelized. Flip and finish grilling on the other side until the internal temperature reaches 165°F.
Step 2
Remove from the grill and let rest for 10 minutes. Once rested, cube the chicken.
Step 3
In a pan over medium heat, add half of the teriyaki glaze and the cubed chicken. Toss to combine.
Assemble the Pizza
Step 1
Add teriyaki glaze to the grilled side of the pizza dough, top with mozzarella cheese, teriyaki chicken, and more cheese.
Step 2
Return to the grill, cover, and cook for 8-10 minutes or until the cheese has melted and the pizza crust is crispy.
Step 3
Top with grilled pineapple slices, sliced scallions, and more teriyaki glaze.
