- 1 cup fresh ginger, sliced
- 2 1/2 cups water
- 5 - 6 tablespoons maple syrup, adjusted to taste
- Juice from 1½ lemons
- Sparkling water, for topping
- Ice, for serving
Method
Step 1
Add sliced ginger and 2½ cups water to a medium saucepan. Bring to a boil, then lower heat and simmer for 30 minutes.
Step 2
In a large jar or measuring cup, combine lemon juice and maple syrup. Stir until fully mixed.
Step 3
Once the ginger mixture has simmered, strain out the solids and pour the liquid into the jar with lemon and maple syrup. Stir well and let cool.
Step 4
Fill a glass with ice. Add about ¼ cup of the ginger syrup mixture (or to taste) and top with sparkling water. Stir gently and enjoy!
