ingredients

  • 1 cup fresh or frozen blackberries (if frozen, thaw first)
  • 1 cup sliced fresh ginger (about a 4–5 inch piece)
  • 2 1/2 cups filtered water
  • Juice from 1 1/2 lemons (about 3 tablespoons)
  • 5–6 tablespoons pure maple syrup
  • Sparkling water, for topping
  • Ice, for serving

Method

  • Step 1

    Slice the ginger and place in a medium pot with 2 1/2 cups filtered water. Bring to a boil, then reduce heat and simmer for 30 minutes.

  • Step 2

    While the ginger steeps, puree the blackberries in a blender or food processor. Strain through a fine mesh sieve to remove seeds.

  • Step 3

    In a large pitcher or jar, combine the strained ginger liquid (once cooled), lemon juice, and maple syrup. Stir to mix.

  • Step 4

    To serve, fill a glass with ice. Add 2–3 spoonfuls of blackberry puree, pour in about 1/4 cup of the ginger mixture, and top with sparkling water. Stir gently and enjoy.
