  • 2 lbs cut into pieces Boneless chicken thighs
  • 1 1/2 cups uncooked Long-grain white rice
  • 1 can 14 oz Diced tomatoes
  • 1 can 4oz can Diced green chiles
  • 2 cups Chicken broth
  • 1 packet Taco seasoning
  • 1 cup shredded Mexican cheese blend
  • 1/4 cup Fresh cilantro

Method

  • Step 1

    Preheat oven to 375°F and grease a 9×13 inch baking dish.

  • Step 2

    Combine rice, diced tomatoes, green chiles, chicken broth, and taco seasoning directly in the baking dish.

  • Step 3

    Add chicken pieces and stir everything together to combine.

  • Step 4

    Cover tightly with foil and bake for 45 minutes.

  • Step 5

    Remove foil, sprinkle cheese on top, and bake uncovered for another 10 minutes.

  • Step 6

    Garnish with chopped cilantro before serving. Let rest 5 minutes before serving.
