- 2 lbs cut into pieces Boneless chicken thighs
- 1 1/2 cups uncooked Long-grain white rice
- 1 can 14 oz Diced tomatoes
- 1 can 4oz can Diced green chiles
- 2 cups Chicken broth
- 1 packet Taco seasoning
- 1 cup shredded Mexican cheese blend
- 1/4 cup Fresh cilantro
Method
Step 1
Preheat oven to 375°F and grease a 9×13 inch baking dish.
Step 2
Combine rice, diced tomatoes, green chiles, chicken broth, and taco seasoning directly in the baking dish.
Step 3
Add chicken pieces and stir everything together to combine.
Step 4
Cover tightly with foil and bake for 45 minutes.
Step 5
Remove foil, sprinkle cheese on top, and bake uncovered for another 10 minutes.
