Cranberry, Oat, And Hemp Seed Buns
toasty cranberry, oat + hemp seed buns. hello, weekend.

4 cups flour (of choice)
1 cup dried cranberries
1 cup oats
0.5 cup hemp seeds
1 packet yeast
no.1 -- add the yeast to 0.33 cup of warm (not hot) water and let sit.
no.2 -- bring 2 cups of water to boil, adding the oats to cook for several minutes. set aside to cool.
no.3 -- combine all the ingredients in the yeast bowl and mix. add the flour in slowly. it may look like you've added too much flour but give it enough of a stir and moisture will be released from the oat mix.
no.4 -- once the mix is dough-like, knead it on a floured surface and add to a new, greased bowl. cover and let sit in a warm spot for 45 minutes. I like to set my dough on a windowsill in the sun until it has doubled in size.
no.5 -- roll the dough into 15-18 balls and put them in a baking pan w. a bit of olive oil. don't set them too close because they will expand in the oven. you do want them to end up rising j to each other because it keeps the buns moist while the 'crust' gets crunchy and golden.
no.6 -- set the oven to 350°F and bake for 20-ish minutes. take a peak. if they are starting to brown then switch the oven to broil for a few minutes so the tops get nice and golden. watch 'em!
no.7 -- slather with marmalade, chutney, honey, etc. would make awesome chickpea 'burger' + pea shoot sliders!
