Banana-walnut Buckwheat Waffles

RECIPE
2 cups organic buckwheat flour (I love @bobsredmill)
1.75 cups almond milk (you could sub for any 'milk')
0.5 cups walnuts
2 ripe bananas
2 T maple syrup
3 t baking powder
1 t sea salt
1 t cinnamon (if you like!)
First, mix together flour, b.p., salt + cinnamon. then, pour in almond milk and maple syrup. combine thoroughly. heat waffle iron, using coconut oil to coat. Pour in a half cup and dump a greedy handful of chopped walnuts and sliced banana. Close the iron + wait impatiently for your waffle! I like them crispy on the outside so I wait a little longer. Top with as much fresh, seasonal, and local fruit as you can get your hands on. I've tried a savoury version too with chives, mushroom, and asparagus -- just be sure to leave out the maple syrup for those ones. Enjoy!
