ingredients

  • 3/4 cup mayonnaise
  • 1/3 cup chile sauce
  • 2 tablespoon sour cream
  • 1 tablespoon chopped fresh parsley
  • 1/4 cup minced onion
  • 1 tablespoon dill pickle relish
  • 1 tablespoon fresh lemon juice
  • 2 tsp horseradish
  • 2 tsp Worcestershire sauce
  • 1 1/2 pounds thin-sliced corned beef
  • 1 cup sauerkraut
  • 8 slices dark rye bread
  • 6 tablespoon butter
  • 1 cup Russian dressing

Method

  • Step 1

    Mix all of the dressing ingredients in a bowl until combines. Cover and refrigerate the dressing until you are ready to make the Reuben sandwiches.

  • Step 2

    Heat a stockpot with a little water. Insert a steamer basket in the pot and place the corned beef in the basket. Steam the corned beef for 3-4 minutes to heat it through.

  • Step 3

    Melt the butter in a large skillet. Place the slices of dark rye in the skillet and toast until crisp and browned, about 5 minutes.

  • Step 4

    Spread a layer of Russian dressing on one slice of the bread. Add a layer of Russian dressing, then pile on the corned beef. Place another slice of bread on top of the corned beef and serve.
