ingredients
- 4 English muffin tops
- 4 spears asparagus, cut in half
- 6 slices coppa salami or prosciutto
- 1 cup chive cream cheese
- 1 cup cantaloupe balls
- fresh mint for garnish
- fresh chives for garnish
Method
Step 1
Separate the English muffins with the tines of a fork. Toast the English muffin halves.
Step 2
Bring a small saucepan of salted water to a boil. Add the asparagus spears and blanch for two minutes until tender. Drain the asparagus and wrap in the Cotto salami.
Step 3
Spread the chive cream cheese on the other four English muffin halves. Top each English muffin half with two of the asparagus spears wrapped in Cotto salami. Add two of the cantaloupe balls, then garnish with mint and chives. Add more of the Cotto salami, cantaloupe balls, with mint and chives on the side of the plate.
