ingredients

  • 4 English muffin bottoms
  • 1 cup mayonnaise
  • 2 tablespoons lemon zest
  • 4 leaves of butter lettuce
  • 6 ounces smoked salmon lox
  • 1 cup small red grapes
  • 1/2 cup walnut halves and pieces
  • 1 Fuj apple, thinly sliced
  • 4 slices fresh lemon
  • fresh dill sprigs for garnish

Method

  • Step 1

    Separate the English muffins with the tines of a fork. Toast the English muffin halves.

  • Step 2

    In a small bowl mix the mayonnaise with the lemon zest. Spread some of the lemon mayonnaise on four of the English muffin halves. Add a small leaf of butter lettuce. Add some of the smoked salmon lox, then add some grapes, walnuts and sliced apples. Garnish with a slice of lemon and fresh dill.

  • Step 3

    Add more of the Cotto salami, cantaloupe balls, with mint and chives on the side of the plate.
