ingredients

  • 1 pound fresh asparagus, tips cut, stems cut in 1" pieces
  • 2 tablepoons canola oil
  • 1 tablespoon grated ginger
  • 2 cloves minced garlic
  • 2 tablespoons fermented Chinese black beans
  • 1/2 teaspoons chopped pickled Thai bird chiles
  • 2 tablespoons Shaoshing Chinese rice wine
  • 1 tablespoon lite soy sauce
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoons toasted sesame seeds for garnish

Method

  • Step 1

    Heat a saucepan of salted water to a boil. Add the asparagus and quickly blanch for 30 seconds. Drain the asparagus and plunge it into a bowl filled with ice to stop the cooking and set the green color. Drain and pat dry the asparagus.

  • Step 2

    In a wok or skillet over medium-high heat, add the canola oil, ginger, garlic and black beans and stir-fry for 30 seconds. Add the asparagus and Thai bird chiles and stir-fry about 2 minutes. Stir in the Chinese rice wine, lite soy sauce and sesame oil and stir to coat the asparagus. The asparagus will be tender but still crisp. Garnish the asparagus with sesame seeds and serve hot.

  • Step 3

    Add shrimp, chicken, beef or pork to the asparagus stir-fry. Chill the asparagus and serve as a salad.
