ingredients

  • 4 6 ounce fillets fresh salmon
  • 3/4 cup water
  • 3/4 cup sake
  • 1 tablespoon granulated sugar
  • 2 tablespoons mirin
  • 2 tablespoons lite soy sauce
  • 1 1/4 cups white miso paste

Method

  • Step 1

    Pour the water and sake in a small saucepan over medium-high heat. Add the sugar, mirin, soy sauce and white miso and stir to combine. Bring the mixture to a simmer and while stirring. Let the marinade cool to room temperature.

  • Step 2

    Pour the cooled miso marinade in a container. Add the salmon filets and turn to coat all sides in the marinade. Cover the container and place the salmon in the fridge to marinate. Each day turn the salmon over and stir the marinade. The salmon can marinate overnight but it's best when marinated 3 days.

  • Step 3

    Heat the oven to broil. Place the oven rack so it's about 8" below the broiler. Cover a baking sheet with foil, then place a rack on top of the baking sheet. Take the salmon out of the marinade and wipe off any excess marinade.

  • Step 4

    Place the salmon filets on the rack over the cookie sheet. Broil for 5 minutes, then turn the baking sheet and broil the salmon for another 6-7 minutes. The salmon should be 125 on a meat thermometer for medium-rare.

  • Step 5

    Chill any salmon filets after broiling and serve as a salad or breakfast the next day. It's delicious as a summer picnic dish.
