ingredients

  • 8 ounces fresh green beans, cut in half
  • 1 teaspoons Ball Fruit Fresh
  • 4 tablepoons rice vinegar,
  • 2 tablepoons dashi stock
  • 1 tablepoons mirin
  • 1 tablepoons lite soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 2 teaspoon toasted sesame seeds

Method

  • Step 1

    Place 1 tsp. of the toasted sesame seeds in a mini food processor and pulse for about 15 seconds to make a coarse ground sesame dust.

  • Step 2

    In a small bowl combine the rice vinegar, dashi, mirin, soy sauce, sugar, sesame oil and the 1 tsp. of ground sesame seeds.

  • Step 3

    Heat a saucepan of salted water to the boil. Add the Fruit Fresh and the green beans and blanch for 2 minutes. Drain and immediately put the green beans in ice water to cool and set the color.

  • Step 4

    Pat the green beans dry. Place on a serving plate and drizzle with the vinaigrette. Garnish with the remaining 1 tsp. of toasted sesame seeds.

  • Step 5

    Note: I make homemade dashi which is quick and easy. Add it to soups, stews and sauce. You can find instant dashi in the supermarket. Just add hot water.
