ingredients

  • 1 1/2 teasopon quick-rise yeast
  • 1/4 cup warm water at 110 degrees
  • 1/4 cup warm whole milk
  • 4 tablepoons melted butter
  • 2 large eggs, beaten
  • 4 1/2 cups bread flour
  • 1 teaspoon allspice
  • 1/2 teaspoon salt
  • 1 cup chopped dried pineapple
  • 1 cup currants or raisins
  • 1 cup chopped pistachios
  • 1/2 cup melted butter
  • 1/2 cup powdered sugar
  • 1 tablespoon whole milk

Method

  • Step 1

    Add the warm water to the bowl of a mixer. Sprinkle the yeast over the water and stir to combine. Stir the yeast into the warm water with a spoon. Let the water and yeast stand about 5 minutes until the yeast activates and starts to bubble and foam.

  • Step 2

    In another bowl, add the sugar, warm milk, melted butter and eggs and stir to combine. With the mixer on low, add the milk mixture to the yeast mixture.

  • Step 3

    With the mixer on slow, slowly add the bread flour one cup at a time, allspice and salt. Continue adding the bread flour one cup at a time to make a soft dough. Knead the dough in the mixer for 7minutes.

  • Step 4

    Spray a large bowl with cooking spray and add the dough. Cover and let the dough rise in a warm place until doubled, two hours.

  • Step 5

    Flour a work surface and turn out the dough. Cut the dough in half to make two loaves. Roll one half of the dough into a 9” x 12” rectangle. Spread half of the dried pineapple, dried papaya, currants and pistachios over the dough. Roll the dough into a log and seal the ends and bottom of the dough with your fingers.

  • Step 6

    Cut the dough log in half, then weave the two strips of dough together. The fruit and nuts should face you. Spray two 5 x 9 loaf pans with cooking spray. Place the dough in the baking pans with the fruit and nuts facing you and cover. Let the dough rise again for two hours.

  • Step 7

  • Step 8

    Heat the oven to 350. Brush the tops of the Babka loaves with melted butter. Bake until the Babka is puffed and golden brown, 30-35 minutes. Remove the pans from the oven and let the Babkacool for 10 minutes. Gently turn the Babka out of the pans and cool on a wire rack.

  • Step 9

    Combine the powdered sugar with the milk to make a runny glaze. Drizzle the glaze over the top. The Babka is also delicious as French Toast.

  • Step 10

    Notes: The recipes makes two loaves of Babka. Plan for about 4 hours total dough rising time.
