ingredients

  • 8 ounces extra-frim tofu cut in cubes
  • 12 large prawns, shelled, tails left on
  • 2 tbsp canola oil
  • 1 teaspoon toasted sesame oil
  • 1 small shallot, minced
  • 2 cloves garlic, minced
  • 3 roma tomatoes, seeded and cut in chunks
  • 2 green onions cut in 1" lengths
  • 2 tbsp mirin
  • 1 tbsp fish sauce
  • 2 teaspoon sugar
  • 1 tbsp lite soy sauce
  • 2 teaspoon fresh lime juice
  • 1/2 teaspoon white pepper
  • fresh cilantro, basil and mint for garnish

Method

  • Step 1

    Place the tofu cubes on a paper towel and pat dry. Heat 1 tbsp. of the canola in a skillet over medium-high heat. Add the tofu and fry, turning to brown on all sides, about 8 minutes in total. Drain the tofu on a cookie rack.

  • Step 2

    Add the remaining 1 tbsp. of canola oil, sesame oil, the tofu and prawns back to the skillet over medium-high heat and cook until the prawns start to turn pink, about 2-3 minutes. Add the shallots, garlic, green onions and tomatoes and stir-fry until the vegetables are soft, about 3 minutes.

  • Step 3

    Add the mirin, fish sauce, sugar, soy sauce, lime juice and white pepper and cook the sauce with the prawns and tofu for another 3 minutes. Spoon the tofu and prawns onto a serving platter and garnish with the fresh cilantro, basil and mint leaves.
