ingredients

  • 12 chicken wings, tips cut and discarded
  • 1 cup ale
  • 1/2 cup low-sodium soy sauce
  • 2 tbsp Mirin
  • 1 tbsp Japanese togarashi seasoning
  • 1/2 cup sweet soy sauce
  • 4 tbsp ale
  • 1/2 cup cornstarch
  • 1/2 cup flour
  • 1 cup ale
  • 1/4 tsp each, garlic salt, onion powder, and paprika
  • 1/2 tsp white pepper
  • canola oil for frying

Method

  • Step 1

    Marinate the Chicken Wings- Cut the chicken wing sections like the photo instructions. Use a sharp knife to cut between the bones but not through the skin. Press down on the wing section and flatten. This technique gives you more of the chicken wing to marinate and coat with the batter.

  • Step 2

    In a container, combine the wings, ale, soy sauce and mirin and toss to combine. Cover and refrigerate the wings. Marinate for 2-4 hours.

  • Step 3

    For the Sweet Soy Glaze- Combine the sweet soy sauce and ale in a small saucepan and bring to the boil. Turn the heat down to low and cook the glaze for 2-3 minutes to thicken. Take the saucepan off the heat and let the glaze cool. Reserve for spooning on the wings.

  • Step 4

    Fry the Chicken Wings and Serve- Heat the canola oil in a deep-fryer or heavy stockpot to 350. Combine the cornstarch, flour, ale, and seasonings in a bowl and whisk to combine. The batter should have a loose consistency. Add more ale if the batter is too thick.

  • Step 5

    Take the wings out of the marinade and blot with paper towels. Dip the wings into the batter and slowly lower them into the fryer. Deep-fry until golden brown, about 5 minutes. Drain the wings on a cookie rack over a baking sheet. Immediately season the wings with the togarashi seasoning.

  • Step 6

    Place the wings on a serving platter. Drizzle with the Sweet Soy Glaze.
