ingredients

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon each, salt and pepper
  • 1/2 teaspoon poultry seasoning
  • 1 1/2 cups cream
  • 1 1/2 cups chicken broth
  • 6 cups diced, cooked chicken
  • 1 cup frozen mixed vegetables, thawed
  • 2 cups self-rising flour
  • 2 tablespoon mayonnaise
  • 1 cup whole milk
  • 1 tablespoon granulated sugar
  • 1/3 cup shredded cheddar cheese
  • 2 tablespoon cream
  • 1 cup softened butter
  • 2 tablespoons snipped chives
  • 4 cloves garlic, minced

Method

  • Step 1

    Make the Chicken ala King- In a saucepan melt the butter then add the flour. Cook for 2 minutes for the flour and butter to make a thick roux. Season with salt and pepper. Slowly add the cream and chicken broth a little at a time, stirring to blend with the roux. Continue to stir and cook until the sauce is thick and bubbly, 5 minutes. Add the diced chicken and mixed vegetables and stir to combine. Serve the Chicken ala King hot over the biscuits. For a meal kit, cool the chicken ala king then place in a container and keep in the fridge.

  • Step 2

    Make the Cheddar-Mayo Biscuits- Heat the oven to 425. Spray a baking sheet with non-stick cooking spray. Add the self-rising flour, mayonnaise, whole milk and sugar to a large bowl and stir just to combine the ingredients to form a soft dough. Sprinkle the counter and dough with flour. Gently roll the dough out to 1" thickness then cut into squares.

  • Step 3

    Place the biscuits on the baking sheet. The biscuits should be touching. Brush the tops of the biscuits with the cream. Bake for 12 minutes until the biscuits are golden brown. Serve hot with the Chicken ala King. For a meal kit, cool the biscuits then place in a container and keep it on the kitchen counter until ready to make the kit and deliver.

  • Step 4

    Make the Garlic Chive Butter- Place the softened butter in a small bowl and add the chives and garlic. Mash the butter to combine with the chives and garlic. Serve the butter soft with the Chicken ala King and Biscuits. For a meal kit, place the butter in a container and keep in the fridge until ready to deliver.
