  • 1 pint fresh strawberries
  • 1 (8 ounce) block room temperature cream cheese
  • 1/3 cup sour cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Method

  • Step 1

    Prep the strawberries: Rinse and dry strawberries. Slice in half lengthwise. Use a small spoon or paring knife to carefully scoop out the white core from each half—be careful not to cut all the way through.

    Make the filling: In a mixing bowl, combine cream cheese, sour cream, and vanilla. Beat with a hand mixer until smooth. Add the powdered sugar and beat again until fully incorporated and fluffy.

    Fill the strawberries: Spoon the cheesecake filling into a resealable plastic bag. Snip a small hole in one corner and pipe the filling into the hollowed center of each strawberry half.
