Panna Cotta with gin poached strawberries

ingredients

  • 1/2 oat milk
  • 2 2 cups of double cream
  • 1/4 cup of granulated sugar
  • 1 cup of strawberries and some to garnish
  • 3 sheets of gelatine leaves or vege-gel
  • 1/2 tsp vanilla bean paste
  • 4tbsp sipsmith strawberry smash gin

Method

  • Step 1

    Lightly grease the inside of ramekins with butter. Set aside

  • Step 2

    Soak gelatine leaves into cold water for 10 minutes to soften

  • Step 3

    In a small saucepan, heat milk, double cream and sugar. Heat the mixture on medium to low heat, stirring frequently with a whisk (do not boil)

  • Step 4

    Squeeze gelatine to remove any excess water and add it to the pan, stirring constantly until the gelatine is melted. Stir in the vanilla extract and add in 2 tbsp of the gin to the cream mix

  • Step 5

    Divide the mixture between the prepared ramekins. Refrigerate for 2-3 hours/ overnight, until set

  • Step 6

    While the panna cotta is chilling. Toss the strawberries in sugar and add the gin to the saucepan. Let it cook for 10 mins, until strawberries are soft.

  • Step 7

    The Panna cotta should be set, place a plate on top, flip it and the ramekin over and tap gently to free the panna cotta. Allow the strawberries to cool down then add the poached strawberries on the side and decorate with strawberries and viola, enjoy.
