ingredients

  • cup 1/2 cup Oat Milk
  • 2 cups Double cream
  • 1/4 cup granulated sugar
  • 1 tablespoon pure chimp matcha green tea or any high grade matcha
  • 3 Sheets of Gelatine leaves
  • 1/2 teaspoon vanilla bean paste

Method

  • Step 1

    Lightly grease the inside of ramekins with butter. Set aside.

  • Step 2

    Soak gelatine leaves into cold water for 10 minutes to soften

  • Step 3

    In a small saucepan, heat milk, double cream, sugar and matcha powder. Heat the mixture on medium to low heat, stirring frequently with a whisk (do not boil) making sure there is no lumps with the added matcha and all has dissolved and the colour turns to green.

  • Step 4

    Squeeze gelatine to remove any excess water and add it to the pan, stirring constantly until the gelatine is melted. Stir in the vanilla bean paste.

  • Step 5

    Strain the mixture through a fine sieve and pour evenly among the prepared ramekins. Refrigerate for 2-3 hours/ overnight, until set

  • Step 6

    Dust extra matcha powder on top. Serve and garnish with strawberries and viola, enjoy!
