Matcha Lava Cake

ingredients

  • 1/4 white chocolate chips
  • 1/2 tbsp unsalted butter
  • 1/4 cup of icing sugar
  • 1 egg + 1 yolk
  • 25g of flour
  • 1 tbsp of @matchaandbeyond culinary matcha powder
  • Icing sugar for dusting

Method

  • Step 1

    Using a pastry brush, lightly grease 2 ramekins with butter and dust lightly with matcha powder. Set them aside.

  • Step 2

    Pre-heat oven at 180oc/Gas mark 4

  • Step 3

    Combine butter and white chocolate in a microwave and melt for 30 secs until melted down and smooth. Add the icing sugar and stir to combine. Add the egg and egg yolk and stir until fully combined

  • Step 4

    In a separate bowl, combine the flour and matcha powder. Add wet mixture and stir until fully incorporated.

  • Step 5

    Divide the mixture and scoop into 2 ramekins and bake in the preheated oven for 12-13 mins

  • Step 6

    Cool for 2 mins, then use a knife to loosen the edges. Finally, turn out into a plate and dust the top with icing sugar and enjoy!
