ingredients

  • 1/2 a cup of flour
  • 2 tbsp of bicarbonate soda
  • 1/2 tbsp of old bay seasoning or paprika
  • 1/2 tbsp of garlic powder
  • 1/2 tbsp of pepper
  • 1/2 tbsp of salt
  • Frozen Mangos or 1 fresh mango
  • 4 habanero peppers seeded. This is due to your discretion. You can use 2-3 if that works for you and if you wish unseeded (optional)
  • 2 cloves of garlic
  • 1/2 tbsp of paprika
  • 1/4 cup of white rice vinegar
  • 2 tbsp of lime juice
  • 1/4 of honey

Method

  • Step 1

    Wash your chicken wings with lemon juice and water. Pat down your chicken with paper towels.

  • Step 2

    Preheat oven to 220oc

  • Step 3

    Mix flour, bicarbonate soda, old bay seasoning, salt, pepper, garlic powder in a bowl and stir. Dip wings inside until covered and place on a wired baking foil sheet.

  • Step 4

    Pop in the oven and bake at 220C/Gas Mark 6 for 45 mins making sure to flip halfway through cooking.

  • Step 5

    In a food processor blend together Mango, habanero peppers, old bay seasoning, garlic cloves, white wine vinegar and lime juice. Blend until smooth - the mixture will turn into a beautiful bright shade of yellow/orange.

  • Step 6

    In a frying pan, combine honey with your mango habanero pepper mixture and cook on medium heat for 10 mins - ensuring you are stirring throughout to prevent sticking to the pan.

  • Step 7

    Coat your wings in the sauce and pop back into the oven for 8-10 mins to further bake until slightly caramelised and enjoy. Feel free to make more of the mango sauce and sprinkle chopped chives on top
