ingredients
- Chicken Legs
- Grace Foods - Dunn rivers Jerk Seasoning or (any Jerk Seasoning that you may have)
- 1/2 tbsp garlic powder
- 1/2 tbsp chilli flakes
- 1/2 tbsp parsley
- 1/2 tbsp old bay seasoning
- 2 tbsp olive oil
- Spring onion for garnish
- For Glaze: Honey and BBQ Sauce
Method
Step 1
Wash your chicken with lemon and water. Pat down your chicken with paper towels
Step 2
Toss chicken legs with olive oil, old bay seasoning, garlic powder, chilli flakes, parsley. Scoop some of the Jerk seasoning and cover chicken rub it in. Get under the skin so some of the flavours will be based there.
Step 3
Cover with cling foil and leave to marinate in the fridge for about 2 hours. After 2 hours, pop the chicken into an oven dish and into the oven at 180oc and cook for 40-45mins. In about 20 mins flip the chicken over
Step 4
For the glaze in a separate bowl mix bbq sauce and a few squirts of honey and stir until combined.
Step 5
Pop the chicken back in the oven and in about 10 mins, coat the chicken using a basting brush with the bbq honey sauce. Put back into the oven for a further 10 mins until the chicken has a lovely sticky glaze due to the bbq honey sauce and has cooked giving some colour.
Step 6
Remove oven dish from the oven and plate up, cut spring onions to garnish and Enjoy!
