Guava Chicken Wings

ingredients

  • 1/2 a cup of flour
  • 1 tbsp of bicarbonate soda
  • 1/2 tbsp of old bay seasoning or paprika
  • 1/2 tbsp of garlic powder
  • 1/2 tbsp of pepper
  • 1/2 tbsp of salt
  • 1 jar of dunns river guava jam
  • 2 scotch bonnet peppers
  • 2 cloves of garlic
  • Soy sauce
  • Worcester sauce
  • 2 tbsp of lime juice

Method

  • Step 1

    Wash your chicken wings with lemon juice and water. Pat down your chicken with paper towels.

  • Step 2

    Preheat oven to 220oc

  • Step 3

    Mix flour, bicarbonate soda, old bay seasoning, salt, pepper, garlic powder in a bowl and stir. Dip wings inside until covered and place on a wired baking foil sheet.

  • Step 4

    Pop in the oven and bake at 220oc for 45 mins making sure to flip halfway through cooking.

  • Step 5

    In a food processor blend together scotch bonnet peppers, a little water, crushed garlic and a soy sauce.

  • Step 6

    In a frying pan, combine half of the guava jam, a little water, lime juice, Worcester sauce and the blended scotch bonnet mixture and cook on a low/medium heat for 10 mins - ensuring you are stirring throughout to prevent sticking to the pan.

  • Step 7

    Coat your wings in the guava sauce mixture, sprinkle with coriander or chopped chives and enjoy. It can be eaten at room temperature or can be served immediately.
