ingredients

  • Chicken Wings (chop into drums and flats, unless if they are done already)
  • 1/2 a cup of flour
  • 2 tbsp of bicarbonate soda
  • 1 tbsp sesame seeds
  • 1/2 tsp black pepper
  • 1/2 tbsp of garlic powder
  • 1/2 cup of @calenodrinks dark n stormy
  • 1/2 tsp of salt
  • 3 scotch bonnet peppers (optional)
  • 2 cloves of garlic
  • 2 tbsp chilli flakes
  • 1/2 cup of soy sauce
  • 2 tbsp of lime juice
  • 1/4 of honey
  • 1 tbsp of sugar

Method

  • Step 1

    Wash your chicken wings with lemon juice and water. Pat down your chicken with paper towels.

  • Step 2

    Preheat oven to 220oc

  • Step 3

    Mix flour, bicarbonate soda, chilli flakes, old bay seasoning, salt, pepper, garlic powder in a bowl and stir. Dip wings inside until covered and place on a wired baking foil sheet.

  • Step 4

    Pop in the oven and bake at 220oc for 45 mins making sure to flip halfway through cooking.

  • Step 5

    Combine all ingredients for the marinade, in a food processor blend together scotch bonnet peppers and the remaining of the marinade.

  • Step 6

    In a frying pan, bring marinade to boil over medium heat, add 1/2 cornflour tsp, stirring constantly for 10 mins until sauce begins to thicken

  • Step 7

    Coat your wings in the sauce and pop back into the oven for 8-10 mins to further bake until slightly caramelised. Garnish with parsley + sesame seeds. Serve immediately.
