Method
Step 1
Preheat oven to 180oc and line a baking tray with parchment paper.
Step 2
In a bowl, empty the beetroot from the jar. Making sure not to include the juice. As the beetroot is already cooked there is no need to do anything with it. Set aside.
Step 3
Meanwhile put eggs, salt and honey in a bowl and whisk with a hand whisk for 5 mins.
Step 4
Weigh out all dry ingredients and sieve. Combine well in a bowl.
Step 5
Blitz the beetroot in a food processor and add to the cacao mixture and mix well. Pour into a lined baking tray. Sprinkle cacao nibs on top, and pop into the oven and bake for 30 minutes at 180oc. Cool and cut.

- 2 Eggs
- 150g of honey
- Pinch of sea salt
- 100g of plain flour (or Gluten Free Flour)
- 50g of cacao powder
- 1/2 tsp of cacao nibs
- 1/2 tsp of baking powder
