Savory Cabbage Tacos
Tofu Scramble With Marinated Carrots <br><br> Recipe: <br><br> Heat a tsp of coconut oil in a pan, add:<br> 1 cup of chopped onions<br> 1/2 chopped tomatoes <br> 1 tsp Harissa paste<br> 1 tsp rad-el-hannout<br> 1 tsp turmeric<br> 1 tsp garlic <br> <br> When onions turn translucent add 1 block of silken tofu, cut into squares. Mix all the ingredients together, and cook in low hear for another 10 minutes. Add salt and pepper to taste. <br><br> Grate carrots and mix with lemon juice, salt and pepper. Allow to marinate for a few hours in the fridge before using. <br><br> To assemble, remove core from cabbage, then separate individual leaves. Wash, then pat dry with towel. Add 1 tbsp of tofu scramble and 1 tsp of marinated carrots per leaf, wrap up like a taco & enjoy!
