ingredients
- 1 teaspoon Wholemeal flour
- 25 gram Unsalted butter
- 1/4 cup milk
- Salt & pepper, to taste
- 4 Slices sourdough bread
- 2 teaspoons Tsp. Dijon mustard
- 4 Slices of ham
- 50 gram Gruyère cheese, grated
- 2 Slices of gruyère cheese
- 2 Fried eggs
- Micro herbs or chives to garnish
Method
Step 1
Preheat your oven to 180°C/350°F. Begin with the bechamel sauce. Warm the milk in a medium saucepan until it’s hot but not boiling.
Step 2
In another saucepan, melt the butter over medium-low heat. Add the flour and whisk to combine. After about a minute, the roux (butter and flour mix) should become bubbly and hot.
Step 3
Pour the hot milk into the roux sauce, whisking as you do so. Place the saucepan over medium-low heat and whisk until thick and the sauce coats the back of a spoon. Add a pinch of salt and pepper, to taste. Set aside.
Step 4
Place two of the slices of bread in an oven proof frying pan and spread the dijon mustard over the slices. Top with the ham (2 slices per slice of bread) add the slices of cheese, and place the other slices of bread on top to make two sandwiches.
Step 5
Fry the sandwiches for about 2-3 minutes on each side. Pour on the bechamel sauce and add the grated cheese. Place in the oven about 4 to 5 minutes or until the cheese has all melted and becomes bubbly.
Step 6
In the meantime fry 2 eggs in a little butter. Finally, before serving, place the fried eggs on top with a sprinkling of herbs.
