ingredients

Oat Crumble

  • 1 cup Gluten Free Flour Blend
  • 2 1/2 cups Gluten Free Oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 3/4 cup Brown Sugar
  • 1/2 cup Vegan Butter, melted
  • 1 teaspoon Vanilla Extract

Blueberry Filling

  • 2 cups blueberries, fresh
  • 1/4 cup Golden Cane Sugar
  • 1 tablespoon Orange Zest
  • 1 tablespoons Orange Juice
  • 1 tablespoon Cornstarch

Lemon Glaze

  • 1 cup Powdered Sugar
  • 3 tablespoons Lemon Juice
  • 3 tablespoons Oat Milk
  • 1 teaspoon Vanilla Extract

Method

  • Step 1

    Preheat oven to 375

  • Step 2

    To a large bowl, add your flour, oats, cinnamon and brown sugar. Mix to combine.

  • Step 3

    Pour your melted butter and vanilla into your oat mixture and mix until it starts to come together slightly (it will still be crumbly)

  • Step 4

    Line a square baking dish with parchment paper and scoop 3/4 of the mixture into the dish. Pressing into place into an even layer.

  • Step 5

    To another bowl, add blueberries, cane sugar, orange juice, zest and cornstarch. Mix to combine until berries are coated in cornstarch.

  • Step 6

    Scoop filling onto prepared crust layer in your baking dish.

  • Step 7

    Top filling with remaining 1/4 of crumble mixture.

  • Step 8

    Bake at 375 for 45 minutes – blueberries should be cooked, and slightly bubbled, and crumble should be golden.

  • Step 9

    Once baked. Set aside to cool (about 30 minutes).

  • Step 10

    While bars cool, prepare the glaze. To a small bowl, add your powdered sugar, lemon juice, oat milk and vanilla. Whisk together until a thicker, icing like texture is formed.

  • Step 11

    If your icing seems to runny, add more powdered sugar to the bowl, 1 tablespoon at a time.

  • Step 12

    Once bars are cooled. Using a spoon, drizzle the glaze over top the bars. Do not feel like you need to use all of the glaze.

  • Step 13

    Set bars aside again for about 1 hour before eating to give the glaze time to set (about 30 minutes).
