ingredients
- 3/4 cup Sugar
- 1/2 cups Vegetable Oil
- 2 eggs
- 1/2 teaspoons Vanilla Extract
- 1 cup Gluten Free Flour Blend
- 1/4 teaspoon Salt
- 2 tablespoons Cocoa Powder
- 1/2 cup Oat Milk
- 2 teaspoon Green Food Colouring
- 8 ounces Non-Dairy Cream Cheese
- 1/4 cup Vegan Butter
- 1/4 teaspoon Vanilla
- 3 1/2 cups Powdered Sugar
Method
Step 1
Preheat oven to 350 degrees. Prepare cupcake trays with cupcake liners.
Step 2
To a medium bowl, whisk together oil and sugar until sugar is starting to dissolve.
Step 3
Once combined, add your eggs and vanilla, using your electric mixer beat on medium speed to combine for 1 minute
Step 4
To your egg mixture, add your flour, cocoa powder, salt and oat milk. Beat again for 1 – 2 minutes until completely combined and no dry streaks remain, and batter is smooth.
Step 5
Add your green food colouring 1 tsp at a time, and mix until batter is a consistent green colour with no brown batter streaks.
Step 6
Using a cookie scoop, spoon your batter into prepared cupcake trays. Filling them about 3/4 full.
Step 7
Bake in your preheated oven for 15 – 20 minutes until tops are smooth, and a toothpick inserted comes out clean.
Step 8
Top with your cream cheese frosting and sprinkles!
Cream Cheese Frosting
Step 1
In a clean medium bowl, using an electric mixer, cream together your butter and cream cheese until smooth. Add your vanilla. Add powdered sugar to the bowl one cup at a time until frosting is smooth (about 3-5 minutes).
