ingredients
- 1 cup Walnut, halves or pieces
- 1/2 cup grated Parmesan Cheese
- 2 tablepoons Minced Garlic
- juice of Half a Lemon
- 3 cup Basil Leaves
- To Taste Salt & Pepper
- 1 cup Avocado Oil
Method
Step 1
Add all ingredients except oil to a food processor
Step 2
Turn food processor on low and begin to stream oil into the processor to emulsify the pesto.
Step 3
Add enough oil until you have your desired consistency, may need more or less. The more oil added to more spreadable and green the pesto will stay when storing.
Step 4
Keep in the refrigerator up to one month. This recipe can be duplicated with any herbs you are growing in your garden - parsley, chives, etc. Get creative and try something new!
Step 5
Enjoy pesto in pasta, on toast, as a salad dressing, or as a marinade for chicken!
