ingredients
- 2 Sweet Potatoes
- 1/2 cup Quinoa, uncooked
- 1 Egg
- 1/2 teaspoon Cumin
- 1 teaspoon Salt
- 1 teaspoon Ground Black Pepper
- 1 teaspoon Cilantro
- 1/2 teaspoon Smoked Paprika
- 2 drops Young Living Lime Essential Oil (can substitute for 1 teaspoon Lime Juice
Method
Step 1
Peel and dice sweet potatoes. Over medium heat, cook potatoes in a sauté pan with a tablespoon or avocado oil, until soft.
Step 2
While potatoes are cooking, add 1 cup of water to a pot and bring to a boil. Once boiling add quinoa, reduce to simmer and add a lid. Will take 15-20 minutes to cook. *think of how you cook rice - same technique
Step 3
Once quinoa and sweet potatoes have both cooled slightly mash together.
Step 4
Add in spices and egg and combine.
Step 5
Heat a few tablespoons of oil in a sauté pan. Form mixture into patties and cook until crisp on both sides.
Step 6
Play around with toppings! I love to add 1 tsp of curry powder to 1/2 cup sour cream or plain greek yogurt!
