ingredients

  • 1 pound Ground Beef
  • 1 pound Italian Sausage, uncased
  • 1/2 diced Yellow Onion
  • 3 small Sweet Mini Peppers, diced
  • 2 tablepoons Minced Roasted Garlic
  • 1/4 cup chopped Parsley
  • 3 Eggs
  • 10 oz package Frozen Chopped Spinach, thawed
  • 1 tablepsoon Dijon Mustard
  • To Taste Salt & Pepper
  • 1/4 Bread Crumbs - Optional

Method

  • Step 1

    Preheat oven to 400 degrees.

  • Step 2

    Combine meat, onion, peppers, garlic, parsley, salt and pepper in a large bowl.

  • Step 3

    Take thawed spinach and squeeze as much moisture out as possible, use a cheese cloth or strainer. This is an important step as if enough moisture is not squeezed out the mixture will not bind and breadcrumbs will be needed.

  • Step 4

    Once moisture is removed - add to blend with eggs. Blend until smooth.

  • Step 5

    Add spinach mixture to meat mixture and combine. Mixture should be moist but not wet. If too wet - add breadcrumbs.

  • Step 6

    Roll into golf ball sized balls and place on a lined sheet tray.

  • Step 7

    Bake at 400 degrees for 20-25 minutes.
