ingredients

  • 1 diced Onion
  • 1 diced Eggplant
  • 1 diced Bell Pepper
  • 3 diced Tomatoes
  • 2 tablspoons minced Garlic
  • 2 teaspoon Paprika
  • 1 teaspoon Cumin
  • 4 Eggs
  • 1/2 cup chopped Fresh Cilantro
  • 1/2 cup chopped Fresh Parsley
  • To Taste Salt & Pepper

Method

  • Step 1

    Add 2 tbsp Avocado Oil to pan over medium high heat.

  • Step 2

    Once oil is heated, add diced onions and cook until translucent.

  • Step 3

    Add minced garlic, diced pepper, tomatoes, and eggplant and cook until tender and browned.

  • Step 4

    Add paprika, cumin, salt and pepper.

  • Step 5

    Once veggies are cooked its time to add the eggs. Create 4 holes in the veggie mix to crack eggs into. Add each egg to the hole created and cook until desired doneness.

  • Step 6

    Remove from heat and add fresh cilantro and parsley.

  • Step 7

    Serve as is or over toast. Enjoy!
