Butternut Squash Chili

Nothing goes better with chili than cornbread. Try this fall-inspired comfort food using butternut squash. Add sliced avocado, scallions, and sour cream.

ingredients

  • 1 pound Italian sausage
  • 1 butternut squash
  • 1 can black beans
  • 2 cups frozen corn
  • 1 yellow onion
  • 4 cans fire roasted tomatoes
  • 3 cloves garlic
  • 3 cups bone broth
  • 2 cinnamon sticks
  • 2 teaspoon cumin
  • 2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • To Taste salt & pepper

Method

  • Step 1

    Add 1 tsp avocado oil to a large pot over medium high heat.

  • Step 2

    Uncase sausage and cook until golden brown. Once cooked remove sausage from pan and set aside. Leave oils in pot.

  • Step 3

    Dice onion and garlic and add to pot. Cook until onions begin to carmalize. While onions are cooking, remove skin, seeds and guts from butternut squash and dice.

  • Step 4

    Add black beans, corn, tomatoes, squash, and broth. Bring to a boil.

  • Step 5

    Lower heat to simmer and add spices and cinnamon sticks. Allow to cook down for 1 hour. Remove cinnamon sticks after 40 minutes.

  • Step 6

    Top with avocado slices, green onions, and a dollop of sour cream and enjoy!
