Seasonal eating for the win. A little raw(ish) date sweetened pumpkin pie pot for dinner. Pumpkin, coconut cream, dates, vanilla, PP spice and coconut oil on a crust of dates, almonds, cinnamon and salt. (And there are lots of mini cheesecake style versions in the fridge waiting for the sweet girls who drove for hours today to pick up my dream ...a kitchen island to expand my tiny kitchen space.
