Basil-Lemon Tahini Dressing
- 1/2 cup loosely packed Basil
- 1/3 cup cold Water
- 1/4 cup stirred Tahini
- 1/4 cup Avocado Oil
- 2 tablespoon Lemon Juice
- 1/2 tablespoon White Wine Vinegar
- 1 teaspoon Lemon Zest
- 1/4 teaspoon (5 grams) coarse Kosher Salt
- 1/8 teaspoon coarse Kosher Salt
Method
Basil-Lemon Tahini Dressing
Step 1
Blend all ingredients together.
Step 2
Taste. Add more salt if needed.

Grain Bowl
- Your Protein of Choice
- 4 cups Baby Kale
- 2 cups precooked Grain
- 1 medium Red Onion
- 1 1/2 cups seedless Red Grapes
- 1/4 cup roasted and salted Sunflower Seeds
- 2 teaspoons Avocado Oil
- Lemon Zest
Grain Bowl
Step 1
Preheat oven to 425*.
Step 2
Line baking sheet pan with parchment paper.
Step 3
On one side of the pan add your seedless red grapes drizzle 1 tsp avocado oil. You can keep the stems on.
Step 4
Cut red onion into 1/2 inch wedges. Add to mixing bowl and toss with 1 tsp avocado oil and season with salt and pepper. Then add your onions to the other side of the pan.
Step 5
Roast for 10 min then flip each side keep them separate. Taste your red onions and make sure they are seasoned with enough salt and pepper. You can always adjust at this point.
Step 6
Roast for another 10 min.
Step 7
Remove grapes set aside.
Step 8
Broil onions for another 3 - 5 minutes until they reach desired doneness.
Step 9
Let cool then make your grain bowl.
Step 10
Assemble grain bowl with 1/2 cup of grain, 1 cup of baby kale, your protein, 2 tbsp dressing, roasted grapes, and onions. Top with 1 tbsp roasted & salted sunflower seeds and lemon zest.
