Roasted Grape & Red Onion Grain Bowl with Basil-Lemon Tahini Dressing

"The sweetness of the roasted grapes and savory flavor of the red onions tie together the flavors of the bowl and really make the dressing pop. Oh and you might want to eat that dressing with a spoon so I made sure the recipe makes enough for those who want that extra drizzle. Topped with roasted, salted sunflower seeds and lemon zest, yum. Choose your own adventure and add your favorite protein: grilled chicken, salmon, tofu or chickpeas."

Basil-Lemon Tahini Dressing

  • 1/2 cup loosely packed Basil
  • 1/3 cup cold Water
  • 1/4 cup stirred Tahini
  • 1/4 cup Avocado Oil
  • 2 tablespoon Lemon Juice
  • 1/2 tablespoon White Wine Vinegar
  • 1 teaspoon Lemon Zest
  • 1/4 teaspoon (5 grams) coarse Kosher Salt
  • 1/8 teaspoon coarse Kosher Salt

Method

Basil-Lemon Tahini Dressing

  • Step 1

    Blend all ingredients together.

  • Step 2

    Taste. Add more salt if needed.

Grain Bowl

  • Your Protein of Choice
  • 4 cups Baby Kale
  • 2 cups precooked Grain
  • 1 medium Red Onion
  • 1 1/2 cups seedless Red Grapes
  • 1/4 cup roasted and salted Sunflower Seeds
  • 2 teaspoons Avocado Oil
  • Lemon Zest

Grain Bowl

  • Step 1

    Preheat oven to 425*.

  • Step 2

    Line baking sheet pan with parchment paper.

  • Step 3

    On one side of the pan add your seedless red grapes drizzle 1 tsp avocado oil. You can keep the stems on.

  • Step 4

    Cut red onion into 1/2 inch wedges. Add to mixing bowl and toss with 1 tsp avocado oil and season with salt and pepper. Then add your onions to the other side of the pan.

  • Step 5

    Roast for 10 min then flip each side keep them separate. Taste your red onions and make sure they are seasoned with enough salt and pepper. You can always adjust at this point.

  • Step 6

    Roast for another 10 min.

  • Step 7

    Remove grapes set aside.

  • Step 8

    Broil onions for another 3 - 5 minutes until they reach desired doneness.

  • Step 9

    Let cool then make your grain bowl.

  • Step 10

    Assemble grain bowl with 1/2 cup of grain, 1 cup of baby kale, your protein, 2 tbsp dressing, roasted grapes, and onions. Top with 1 tbsp roasted & salted sunflower seeds and lemon zest.

  • Step 11

    **I used Trader Joe’s Harvest Grains Blend (pearled couscous, orzo, baby garbanzo beans and red quinoa).
