ingredients

  • 1 can chickpeas, rinsed and drained
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 3 tablespoons tapioca flour
  • 1/2 cup reduced sugar barbecue sauce
  • 2 cups seasoned breadcrumbs
  • Oil, for greasing baking sheet

Method

  • Step 1

    Pat chickpeas dry and season with salt and pepper.

  • Step 2

    Line a large baking sheet with parchment paper drizzled with oil and set up 3 shallow bowls: one with tapioca flour, the second with barbecue sauce, and the third with bread crumbs.

  • Step 3

    Preheat oven to 400ºF. Dredge the chickpeas in the tapioca flour, then the barbecue sauce, making sure they are fully coated. Dredge in the bread crumbs making sure chickpeas are fully coated and transfer to the prepared baking sheet, spacing them apart.

  • Step 4

    Bake until the coating is golden and crisp, shaking pan half way through, about 15-20 minutes. Alternatively, air fry 7-10 minutes in 2 batches.

  • Step 5

    Serve croutons warm or at room temperature over a salad.
