ingredients

  • 3 tablespoons avocado oil, dividied
  • 1 small white onion, chopped
  • 3 cups frozen corn, thawed
  • 2 cup frozen lima beans, thawed
  • 1 red bell pepper, seeded and chopped
  • 2 (10 ounce can) Mild Diced Tomatoes + Green Chilies 10 oz, drained
  • Kosher Salt, to taste.
  • Black Pepper, to taste.
  • Fresh Basil, for garnish

Method

  • Step 1

    Heat oil in a large skillet over medium heat.

  • Step 2

    Add onion and corn and cook until onion is translucent and corn begins to turn golden around the edges.

  • Step 3

    Add remaining ingredients to skillet, stir to combine, and let cook for about 5 minutes.

  • Step 4

    Transfer succotash to a serving plate and top with chopped fresh basil.

  • Step 5

    Serve immediately or let chill in the fridge.
