ingredients
- 3 tablespoons avocado oil, dividied
- 1 small white onion, chopped
- 3 cups frozen corn, thawed
- 2 cup frozen lima beans, thawed
- 1 red bell pepper, seeded and chopped
- 2 (10 ounce can) Mild Diced Tomatoes + Green Chilies 10 oz, drained
- Kosher Salt, to taste.
- Black Pepper, to taste.
- Fresh Basil, for garnish
Method
Step 1
Heat oil in a large skillet over medium heat.
Step 2
Add onion and corn and cook until onion is translucent and corn begins to turn golden around the edges.
Step 3
Add remaining ingredients to skillet, stir to combine, and let cook for about 5 minutes.
Step 4
Transfer succotash to a serving plate and top with chopped fresh basil.
Step 5
Serve immediately or let chill in the fridge.
