Acorn Squash Rings With Fried Eggs, Bacon And Feta
Sunday brunch is a sautéed slices acorn squash with an egg in the middle. I topped it with a sprinkle of hash brown spice, some feta, chopped bacon, and micro greens -@thetoastedpinenut

Serves 1

Ingredients

1/2 tbsp olive or coconut oil

2 rings acorn squash

2 eggs

salt and pepper

1 slice of bacon, cooked and crumbled

1 tbsp crumbled feta cheese

Directions

Heat a medium skillet over medium heat. Add oil and when hot, add the acorn squash rings and season with salt and pepper.  Cook for about 2-3 minutes per side, or until tender and golden brown. 

Once the squash is cooked, crack an egg into each hole, season with salt and pepper and cook to desired level of doneness. Add to a plate and top with crumbled bacon and feta.
