Hot Honey Syrup:
- 1 part hot honey
- 1 part hot water
ingredients
Mezcalita:
- 1 1/2 ounces mezcal
- 1 1/2 ounces pineapple juice
- 1 ounce hot honey syrup (recipe above)
- 1/2 ounce fresh lime juice
- Chili lime salt, for rimming glass
- Cilantro and pineapple wedge, for garnish
Method
Step 1
Make the syrup: Combine equal parts hot honey and hot water in a small bowl or jar. Stir until fully dissolved.
Step 2
Run a lime wedge around the rim and dip into chili lime salt.
Step 3
In a shaker with ice, combine mezcal, pineapple juice, hot honey syrup, and lime juice. Shake well.
Step 4
Strain over fresh ice into the prepared glass. Garnish with cilantro and a pineapple wedge.
