Hot Honey Syrup:

  • 1 part hot honey
  • 1 part hot water

Mezcalita:

  • 1 1/2 ounces mezcal
  • 1 1/2 ounces pineapple juice
  • 1 ounce hot honey syrup (recipe above)
  • 1/2 ounce fresh lime juice
  • Chili lime salt, for rimming glass
  • Cilantro and pineapple wedge, for garnish

Method

  • Step 1

    Make the syrup: Combine equal parts hot honey and hot water in a small bowl or jar. Stir until fully dissolved.

  • Step 2

    Run a lime wedge around the rim and dip into chili lime salt.

  • Step 3

    In a shaker with ice, combine mezcal, pineapple juice, hot honey syrup, and lime juice. Shake well.

  • Step 4

    Strain over fresh ice into the prepared glass. Garnish with cilantro and a pineapple wedge.
