Vegan Cabbage Apple Salad

Salad Ingredients
- 1/2 heads cut into wedges cabbage
- 1 Handful chopped toasted walnuts
- 1/2 apple
- 1 small halved lime
- 1 Handful pomegranate seeds
Method
Step 1
This isn't a rocket science salad. I feel kind of ridiculous writing a recipe for the salad part of this.... anyway.
Step 2
Wash and chop the cabbage. I quartered mine and just chopped mine into thin strips keeping them together. Transferred to a bowl in tactful order.
Step 3
Peel and seed the apple (or not if you want all the added fiber and nutrients of the skin, I eat it as a go :) ) Half the lime and the apple. In a small bowl squeeze some lime juice and add water. This is called in fancy chef terms acidulated water. It will keep your apple from browning. I made a large julienne out of the apple. Like match sticks and layered on top of the cabbage. Use some lime juice to squeeze on the half of the apple you are using for the salad so you can eat a non brown apple later.
Step 4
Add some toasted walnuts and some pomegranate seeds. I leave the amounts up to you and your palate.

- 4 tablespoons Follow Your Heart soy free Mayo
- 1 1/2 tablespoons Apple Cider Vinegar
- 1 1/2 teaspoons organic sugar
- salt
- white pepper
Step 1
All of these amounts can be guesstimated and adjusted to your palate. Less sugar.. perfect, more vinegar have at it. I say use your senses and adjust to what you like. A tip I got in cooking school. Taste the dressing with the greens and apple. Dip a piece of cabbage and apple and give it a taste together. Your apple or green might be more or less sweet or bitter you can adjust accordingly before tossing it in your salad.
