Dutch Baby With Kale, Feta And Radish

If you thought a plain Dutch Baby was exciting enough, check out this loaded beauty.


For the batter:

4 medium eggs, room temp

3/4 c half fat milk

2 tbs unsalted butter, melted

1/2 cup flour

2 tbs cornstarch

a pinch of salt

Lots of freshly ground black pepper

For the pan: 1 tbs unsalted butter


1 1/2 steamed kale

1/3 cup feta, crumbled

4 radishes, washed & thinly sliced

1-2 fried egg(s)



Preheat oven to 230C, with a large skillet inside.

Blend all the wet ingredients in a blender in high speed until frothy and then add the dry.

When the oven is ready (aka really hot), carefully take the pan out; add the butter and swirl it around quickly, so that it coats the skillet. Immediately after, pour in the batter and place back in the hot oven.

Cook until golden brown and puffed, about 20'.

Top with the sliced radishes, kale, feta & fried egg(s).
