  • 2 honeynut squash, halved lengthwise and seeds removed
  • 2 tablespoons extra virgin olive oil
  • 1 to 2 teaspoons flaky sea salt, plus more for finishing
  • 2 tablespoons high-quality butter (such as European)
  • 4 teaspoons pure maple syrup
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon ground cinnamon

Method

  • Step 1

    Preheat the oven to 400°F.

  • Step 2

    Cut the honeynut squash in half lengthwise and scoop out the seeds. Drizzle the squash halves with extra virgin olive oil and sprinkle with flaky salt.

    Place 1 tablespoon of butter and 1 teaspoon of pure maple syrup into the center of each squash half. Generously sprinkle cinnamon and fresh thyme leaves over the top.

    Transfer the squash halves to a baking dish, cut side up. Roast for 60 minutes, basting every 20 minutes with the melted butter and maple syrup in the center of the squash.
