What do you make for dinner when you're dining alone? The best sea bass you can get your hands on! Took this pretty baby and seared it on all sides with sea salt and olive oil. Made a pan sauce with 2 T butter, 3 cloves roasted garlic (ready made available at Schwartz's Appetizing in @gourmetglatt) some fresh thyme and rosemary. Finished off the sauce with a squeeze from half a lemon. Top the fish with the garlic lemon sauce. And the countdown begins! Usually make homemade pizza for my kids but tonight it's adult pizza night. Couldn't decide which to make so made both: fig jam, caramelized onion and roasted garlic with goat cheese feta and Parmesan. The other is spinach basil pesto with fresh mozzarella. Making dinner with the leftovers you have on hand is the best for a busy mom. I made these Sweet Potato Quinoa Burgers with cooked sweet potato (you can quick cook them in the microwave), 2 cups cooked quinoa, 2 cups chopped kale, 2 eggs, panko, smoked paprika, salt and pepper. Mix and pan fry them until golden. Served with leftover cabbage slaw, garlic aioli and sliced avocado. Later gram: no meat during the nine days so made sure our last fleish was a good one! Rib steaks marinated in olive oil, garlic, and rosemary. Seasoned generously with sea salt. Seared on a very hot cast iron pan till medium rare. Slather some cilantro garlic butter (I use earth balance) on hot steak while it finishes cooking. Let rest before slicing. Needed to come up with a dinner on the fly without heading back to the market. I slow roasted some tomatoes that were sitting on the counter, then found a recipe for garlic broth with poached egg and slow roasted tomatoes. The result screams summer in a soup! 🙌☀️🍜 Slow roast the tomatoes in olive oil, sea salt and 2 cloves of garlic from a head of garlic. Slice the rest of the head of garlic and cook in 1/3 cup olive oil till lightly browned. Had 6 cups veggie broth and simmer for 25 min to let garlic infuse. Season with salt and pepper. Poach eggs in broth to cook and remove. Char half a jalapeno pepper over stovetop flame, then chop. Place tomatoes, sliced avocado, jalapeno, chopped cilantro and crumbled feta or chopped fresh mozzarella into bowls. Top with broth and poached egg. Shaka Shaka Shuka- it's Shakshuka night!!! 👯 Who says eggs are only for breakfast When you poach them in simmering tomato sauce and top them with feta and cilantro and serve over faro or rice, it's what's for dinner 🍳 Sauté sliced onions and red pepper till soft, 15 min. Add 3 slices cloves garlic and cook 1 min. Add 1 tsp cumin, 1 tsp paprika (or smoked paprika) and 1/8 tsp cayenne pepper. Add 28 oz crushed tomato, season with s&p and simmer 10 min to thicken. Add 3/4 c crumbled feta (I used sheep's milk feta). Make wells and drop in 4 eggs into sauce. Cover and simmer until just set, 7 minutes. What's for dinner tonight kids! Marinated and grilled crispy chicken thighs and roasted sweet potato fries with tahini sauce and tomato dill salad. Super yummy and satisfying, and was quick and easy, too! Marinated boneless skin-on chicken thighs in olive oil, garlic, lime juice, red pepper flakes and sea salt. Roasted sweet potatoes sticks with olive oil and smoked paprika and salt in 400 degree oven for 25 min. till crisp and tender. Made a quick sauce with 1/4 c tahini, 4 minced garlic cloves, 1/2 lemon, some fresh dill, sea salt and some water to thin it out. Toss a mix of baby tomatoes halved with lemon juice dill and sea salt. Grill the chicken till crisp and cooked through, then slice. Oh yeah. No we're talking. A simple plate of real delicious food with no fancy ingredients that just tastes divine. This is a perfect healthy weeknight dinner. I roasted some baby eggplants and tomatoes on the vine with some fresh basil, olive oil and sea salt. Cauliflower florets roasting in another pan. Seared some sea bass filets in a little butter, oo, sea salt and crispy basil. Pureed the cauliflower with some vegetable stock and coconut milk and served it under the sea bass and roasted veggies.
